Instructions:

1. Prepare Ingredients:
- Clean and slice the mushrooms.
- Clean and finely slice the leek.
- Mince the garlic cloves.
- Cut the chicken thighs into bite-sized pieces.
2. Cook the Chicken:
- Heat the olive oil in a large, heavy-bottomed pan over medium heat.
- Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
3. Sauté the Vegetables:
- In the same pan, add the butter and let it melt.
- Add the sliced mushrooms and leeks. Sauté them until they are softened and slightly browned, about 5 minutes.
- Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.
4. Toast the Rice:
- Add the rice to the pan and stir well to combine with the vegetables. Cook for about 2 minutes, allowing the rice to become slightly toasted and opaque.
5. Deglaze and Cook:
- Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed by the rice.
- Begin to add the chicken gravy, one ladleful at a time. Stir continuously and let each ladleful of gravy be absorbed before adding the next. This process should take about 18-20 minutes in total.
- When the rice is creamy and cooked to your desired texture, stir in the cooked chicken pieces and heat through.
6. Serve:
- Taste the risotto and adjust seasoning if necessary (salt and pepper).
- Garnish with fresh thyme if using. Serve hot.
