Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
2. Prepare the Wet Ingredients:
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This will take about 2-3 minutes using an electric mixer on medium speed.
- Add the orange zest and mix until well incorporated.
- Beat in the eggs one at a time, making sure each egg is fully mixed before adding the next.
3. Add the Citrus and Fruit:
- Pour in the orange juice and mix until incorporated.
- Scoop out the pulp from the passion fruits and add it to the mixture, stirring well to combine.
- Fold in the Greek yogurt until the mixture is smooth and well blended.
4. Prepare the Dry Ingredients:
- In a separate bowl, sift together the self-raising flour and baking powder.
- Gradually add the dry ingredients into the wet mixture, folding gently with a spatula until just combined. Do not overmix; a few lumps are okay as this will ensure the cupcakes are light and fluffy.
