Lemon bars

Ingredients:

2/3 cup butter

1 tsp vanilla extract

Instructions:

1. Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.
2. Prepare the Crust:
- In a large mixing bowl, cream together the softened butter and 1/2 cup (100g) of sugar until light and fluffy.
- Mix in the flour until the mixture is well combined and crumbly.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for about 15-20 minutes, or until it is lightly golden brown. Remove from the oven and set it aside to cool slightly.
3. Prepare the Lemon Filling:
- In another mixing bowl, whisk together the remaining 1 cup (200g) of sugar, lemon zest, and vanilla extract until well combined.
- Whisk in the egg yolks one at a time, ensuring each yolk is fully incorporated before adding the next.
- Gradually add in the lemon juice, whisking continuously until the mixture is smooth and fully combined.
4. Bake the Lemon Bars:
- Pour the lemon filling over the pre-baked crust, spreading it out evenly with a spatula.
- Bake the lemon bars in the preheated oven for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
- Remove from the oven and allow the lemon bars to cool completely in the baking dish on a wire rack.
5. Chill and Serve:
- Once cooled, refrigerate the lemon bars for at least 1-2 hours to allow the filling to firm up.
- After chilling, cut the lemon bars into squares or rectangles using a sharp knife.
