Lemon bars are a beloved classic that combines a buttery shortbread crust with a tangy lemon filling. This delightful dessert is perfect for any occasion, from family gatherings to casual afternoon tea. Prepare to indulge in a burst of citrus flavor with each bite.

Instructions:

1. Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.
2. Prepare the Crust:
- In a large mixing bowl, cream together the softened butter and 1/2 cup (100g) of sugar until light and fluffy.
- Mix in the flour until the mixture is well combined and crumbly.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for about 15-20 minutes, or until it is lightly golden brown. Remove from the oven and set it aside to cool slightly.
3. Prepare the Lemon Filling:
- In another mixing bowl, whisk together the remaining 1 cup (200g) of sugar, lemon zest, and vanilla extract until well combined.
- Whisk in the egg yolks one at a time, ensuring each yolk is fully incorporated before adding the next.
- Gradually add in the lemon juice, whisking continuously until the mixture is smooth and fully combined.
4. Bake the Lemon Bars:
- Pour the lemon filling over the pre-baked crust, spreading it out evenly with a spatula.
- Bake the lemon bars in the preheated oven for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
- Remove from the oven and allow the lemon bars to cool completely in the baking dish on a wire rack.
5. Chill and Serve:
- Once cooled, refrigerate the lemon bars for at least 1-2 hours to allow the filling to firm up.
- After chilling, cut the lemon bars into squares or rectangles using a sharp knife.
- Optionally, dust the tops of the lemon bars with powdered sugar just before serving for an extra touch of sweetness.
6. Enjoy:
- Serve the lemon bars chilled or at room temperature and enjoy the bright, tangy flavors!

Tips:

- Prepare all ingredients in advance: Make sure to measure out and prepare all ingredients before starting to streamline the process.

- Use fresh lemons: For the best flavor, use freshly squeezed lemon juice and freshly grated lemon zest.

- Chill before serving: Allow the lemon bars to chill in the refrigerator for several hours before serving to set the filling and enhance the flavor.

- Line the baking pan: Line your baking pan with parchment paper, leaving some overhang. This will make it easy to lift the bars out for cutting and serving.

These lemon bars are sure to be a hit with their perfect balance of sweet and tart flavors. With a buttery shortbread base and zesty lemon topping, they provide a refreshing treat that’s easy to make and enjoy. Serve chilled and dusted with powdered sugar for a beautiful presentation and extra touch of sweetness.
