2. In a medium bowl, lightly mash the peas with a fork, leaving some whole for texture.
3. Add the egg yolk, flour, bread crumbs, and finely chopped shallot to the bowl with the peas. Mix well to combine.
4. Form the mixture into small patties, about the size of a tablespoon each.
5. Heat the olive oil in a large non-stick skillet over medium heat.
6. Add the pea fritters to the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through.
7. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

1. In the same skillet, add the shrimps and cook over medium heat for 2-3 minutes on each side, or until they are pink and opaque. You may need to add a little more olive oil if the skillet is too dry.
