Peanut butter cookies

Peanut butter cookies are a timeless treat loved by many. With their delightful crunch and rich, nutty flavor, they make for a perfect snack or dessert. Whether you're an experienced baker or a novice in the kitchen, this simple yet delicious recipe will guide you through making the perfect batch of peanut butter cookies.

Ingredients:

1 cup butter
220g
1/2 cup brown sugar
120g
1 tsp vanilla extract
4g
1/2 cup peanut butter
120g
1.50 cups all-purpose white wheat flour
190g
1 cup self-raising flour
150g
1 cup peanuts
150g

Instructions:

1. Preheat the Oven:
- Set your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking.
2. Prepare the Wet Ingredients:
- In a large mixing bowl, cream together the softened butter and brown sugar using an electric mixer or by hand with a whisk until the mixture is light and fluffy. This should take about 3-4 minutes.
- Add the vanilla extract and continue to beat until well combined.
- Add the peanut butter to the bowl and mix until fully incorporated and creamy.
3. Incorporate the Dry Ingredients:
- Gradually stir in the all-purpose white wheat flour and the self-raising flour into the wet mixture. You can do this in parts to make it easier to blend.
- Mix until just combined. Do not over-mix as this could make the cookies tough.
4. Add the Peanuts:
- Gently fold in the peanuts until they are evenly distributed throughout the dough.
5. Shape the Cookies:
- Use a tablespoon or a small cookie scoop to portion out the dough, rolling each portion into a ball. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.
- Press each dough ball down lightly with a fork in a crisscross pattern to flatten them slightly, giving them the traditional peanut butter cookie appearance.
6. Bake:
- Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown but the centers are still slightly soft. Rotate the baking sheets halfway through for even baking.
- Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
7. Serve and Store:
- Once completely cooled, enjoy your delicious peanut butter cookies with a glass of milk or a cup of tea!
- Store the cookies in an airtight container at room temperature for up to a week.

Tips:

- Use room temperature butter to ensure it creams well with the sugar.

- For a softer cookie, reduce the baking time slightly and keep an eye on them to avoid over-baking.

- Feel free to add chocolate chips or a sprinkle of sea salt on top for an extra flavor twist.

- Use a cookie scoop to ensure uniform-sized cookies, which will bake evenly.

- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Congratulations! You've successfully made a batch of delicious peanut butter cookies. These cookies are perfect for sharing with friends and family or simply enjoying with a glass of milk. Store them in an airtight container to keep them fresh, and savor the satisfying taste of homemade goodness whenever you like.
