2. Wrapping the Pork:
- Lay out the prosciutto slices. Place each pork fillet on top of 2 prosciutto slices and wrap tightly, ensuring the entire fillet is covered.
3. Searing the Pork:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the wrapped pork fillets to the skillet.
- Cook for about 3-4 minutes on each side or until the prosciutto is crispy and the pork is cooked through (internal temperature should reach 145°F / 62.8°C).
- Remove the pork fillets from the skillet and set them aside. Keep them warm by loosely covering them with foil.
4. Preparing the Sage Butter Sauce:
- In the same skillet, reduce the heat to medium and add 3 tablespoons of butter.
- Once the butter is melted and begins to bubble, add the chopped sage leaves.
