Instructions:

1. Preparation:
- Pat the pork fillets dry with a paper towel. Then, season each fillet on both sides with a dash of salt and black pepper (total: 2 dashes each).
2. Wrapping the Pork:
- Lay out the prosciutto slices. Place each pork fillet on top of 2 prosciutto slices and wrap tightly, ensuring the entire fillet is covered.
3. Searing the Pork:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the wrapped pork fillets to the skillet.
- Cook for about 3-4 minutes on each side or until the prosciutto is crispy and the pork is cooked through (internal temperature should reach 145°F / 62.8°C).
- Remove the pork fillets from the skillet and set them aside. Keep them warm by loosely covering them with foil.
4. Preparing the Sage Butter Sauce:
- In the same skillet, reduce the heat to medium and add 3 tablespoons of butter.
- Once the butter is melted and begins to bubble, add the chopped sage leaves.
- Stir frequently, allowing the sage to cook in the butter for about 1-2 minutes, infusing it with flavor.
5. Adding Lemon:
- Add 1 tablespoon of lemon juice to the skillet. Stir to combine and let it cook for another minute.
- Season the sauce with an additional dash of salt and black pepper.
6. Serving:
- Place the cooked pork fillets on a serving plate.
- Spoon the sage butter sauce over the top of each fillet, ensuring each gets a good amount of sauce and sage.
