This delightful Pumpkin, Spinach, and Ricotta Gratin combines the rich flavors of pumpkin and spinach with the creamy texture of ricotta and sour cream. Perfect for a cozy family dinner, this dish is both nutritious and delicious.

Ingredients:

3 cups spinach

1/2 cup light sour cream

2 cups ricotta cheese

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Pumpkin:
Peel and dice the pumpkin into small cubes. This will help them cook evenly. Set aside.
3. Sauté the Onion:
In a large skillet, sauté the finely chopped onion over medium heat until it becomes translucent, about 5-7 minutes. You can add a small amount of olive oil if needed to prevent sticking.
4. Cook the Spinach:
Add the spinach to the skillet with the onions and cook until wilted, about 2-3 minutes. If the spinach releases a lot of water, drain any excess liquid from the skillet.
5. Prepare the Cheese Mixture:
In a large bowl, combine the light sour cream, ricotta cheese, and half of the grated Parmesan cheese. Mix well. Season with salt and black pepper to taste.
6. Combine Ingredients:
Add the cooked spinach and onions to the cheese mixture and stir until well combined.

Lightly grease a baking dish (about 9x13 inches) with olive oil if desired. Start with a layer of half of the diced pumpkin on the bottom of the baking dish. Spread half of the cheese and spinach mixture over the pumpkin. Add the remaining diced pumpkin on top of the cheese mixture. Finally, spread the remaining cheese and spinach mixture over the final pumpkin layer.
8. Top with Parmesan:
Sprinkle the remaining grated Parmesan cheese evenly over the top layer of the gratin.
9. Bake:
Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the top is golden brown and the pumpkin is tender when pierced with a fork.
10. Serve:
Allow the gratin to cool for a few minutes before serving. This dish is perfect as a hearty vegetarian main or a side dish. Enjoy!
