- Cut the potatoes into even-sized chunks (around 1 to 1.5 inches).
- Place the potato chunks in a large bowl and toss them with a generous pinch of salt and pepper.
3. Cook the Bacon:
- While the oven is preheating, cook the bacon strips in a frying pan over medium heat until crispy. This usually takes about 5-7 minutes.
- Once cooked, place the bacon on a paper towel to drain excess fat and cool down. Once cool, crumble the bacon into small pieces.
4. Roast the Potatoes:
- Place the seasoned potato chunks on a baking sheet in a single layer.
- Roast the potatoes in the preheated oven for about 30-35 minutes or until they are golden brown and crispy on the outside, flipping them halfway through the cooking time to ensure even roasting.
5. Prepare the Avocado:
- While the potatoes are roasting, halve the avocado and remove the pit. Scoop out the flesh and cut it into small cubes.
6. Combine and Garnish:
- Once the potatoes are done, take them out of the oven and let them cool for a few minutes.
- In a large serving bowl, combine the roasted potatoes, crumbled bacon, and avocado cubes.
