Instructions:

1. Prep and Roast Sweet Potatoes:
- Preheat your oven to 400°F (200°C).
- Place the diced sweet potatoes on a baking sheet.
- Drizzle with 1 tbsp olive oil and sprinkle with 1/2 tsp salt and 1/2 tsp white pepper. Toss to coat evenly.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through.
2. Cook the Macaroni:
- While the sweet potatoes are roasting, cook the macaroni according to the package instructions until al dente.
- Drain and set aside.
3. Prepare the Mushrooms:
- In a large skillet, heat 2 tsp coconut oil over medium heat.
- Add the sliced mushrooms and cook until they have released their moisture and are browned, about 5-7 minutes.
