- Peel and dice the potatoes into small cubes.
- Place the potatoes in a pot of boiling water and cook until they are soft, about 10-15 minutes.
- Drain the potatoes and let them cool slightly.
2. Make the Potato Mixture:
- Mash the cooled potatoes until they are smooth. You should get about 1 cup of mashed potatoes.
- Set aside.
3. Activate the Yeast:
- In a small bowl, combine the lukewarm water and yeast.
- Stir lightly and let it sit for about 5-10 minutes until the mixture becomes frothy.
4. Mix the Dry Ingredients:
- In a large mixing bowl, combine the flour, salt, and chopped rosemary.
- Mix well to evenly distribute the ingredients.
5. Combine Wet and Dry Ingredients:
- Create a well in the center of the dry ingredients.
- Pour the yeast mixture and the mashed potatoes into the well.
- Mix the ingredients together until a dough forms.
6. Knead the Dough:
- Turn the dough out onto a floured surface.
- Knead the dough for about 10 minutes, until it becomes smooth and elastic.
- If the dough is too sticky, add a little more flour, one tablespoon at a time, until it reaches the desired consistency.
7. First Rise:

- Let the dough rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
8. Shape the Dough:

- Shape the dough into a loaf or your desired shape.
9. Second Rise:
- Place the shaped dough on a baking sheet lined with parchment paper or in a greased bread pan.

- Let it rise again for about 30-45 minutes, or until it has doubled in size.
10. Preheat the Oven:
- While the dough is rising, preheat your oven to 375°F (190°C).
