Rustic Cheese, Egg & Bacon Pie is a perfect blend of savory flavors enshrined in the flaky goodness of puff pastry. This easy-to-bake pie is ideal for breakfast, brunch, or even a cozy dinner, and brings together classic ingredients like creamy sour cream, rich cheddar cheese, and smoky bacon for a delightful culinary experience.

Ingredients:

2 sheets puff pastry

1 cup sour cream

Instructions:

1. Preheat Oven: Preheat your oven to 200°C (390°F).
2. Prepare the Ingredients:
- Bacon: Cook the bacon strips in a skillet over medium heat until crispy, about 5-7 minutes. Drain on paper towels, then chop into small pieces.
- Cheese: Grate the cheddar cheese if it’s not pre-grated.
3. Mix the Filling:
- In a mixing bowl, combine the sour cream, grated cheddar cheese, chopped bacon, and chopped fresh thyme. Mix well until all ingredients are evenly distributed.
4. Prepare the Pastry:
- Roll out both sheets of puff pastry on a lightly floured surface. Line a pie dish with one of the puff pastry sheets, ensuring it covers the bottom and sides. Trim any excess.
5. Assemble the Pie:
- Pour the sour cream mixture into the pastry-lined pie dish and spread it out evenly.
- Crack the egg into a small bowl and beat it lightly. Brush the edges of the puff pastry with the beaten egg to help seal the pie.
6. Top the Pie:
- Place the second sheet of puff pastry over the filling. Press the edges to seal, and trim any excess pastry. Use a fork to crimp the edges for a decorative finish if desired.
