Sauteed fennel with almonds, raisins and saffron

Instructions:

1. Prepare the Ingredients:
- Fennel: Trim the fennel bulbs by cutting off the stalks and fronds. Cut the bulbs in half lengthwise and then slice them thinly.
- Garlic: Peel and finely chop the garlic cloves.
- Coriander Leaves: Finely chop 2 teaspoons of coriander leaves and set aside. Set aside the remaining 2 cups of coriander leaves for garnish.
- Saffron: In a small bowl, place the saffron and add a tablespoon of warm water. Let it soak for a few minutes.
2. Toast the Almonds:
- Heat a dry skillet over medium heat.
- Add the almonds and toast them for about 3-4 minutes, stirring frequently, until they are golden brown and fragrant. Remove from the skillet and set aside.
3. Saute the Fennel:
- In a large skillet or sauté pan, heat the olive oil over medium heat.
- Add the chopped garlic and cook for about 1-2 minutes, stirring constantly, until it becomes fragrant and lightly golden.
- Add the sliced fennel to the skillet. Sauté for about 10-12 minutes, stirring occasionally until the fennel is tender and golden brown.
4. Add Raisins and Saffron:
- Add the raisins to the skillet with the fennel. Stir to combine.
- Pour in the saffron along with its soaking water. Mix well.
5. Add Orange:
- Add the orange zest and orange juice to the skillet, stirring to incorporate all the flavors. Cook for another 2-3 minutes until the liquid slightly reduces and the fennel is well coated.
6. Combine with Almonds and Garnish:
- Add the toasted almonds to the skillet, mixing them into the fennel mixture.
- Taste and adjust seasoning if necessary, adding salt and pepper to taste.
- Remove the skillet from heat and stir in the 2 teaspoons of chopped coriander leaves.
7. Serve:
- Transfer the sautéed fennel mixture to a serving dish.
- Garnish with the remaining fresh coriander leaves.
