3. Sautéing the Leek:
- Add the chopped leek to the skillet with the remaining bacon fat.
- Sauté over medium heat, stirring occasionally, until the leek is softened and fragrant. This should take about 5 minutes.
4. Adding the Peas:
- Add the peas to the skillet with the sautéed leeks.
- Stir everything together and cook for an additional 3-5 minutes, until the peas are heated through and tender.
5. Combining & Seasoning:
- Return the cooked bacon to the skillet and mix with the peas and leek.
- Season with salt and pepper to taste. Stir everything together until well-combined.
6. Serving:
- Remove the skillet from heat.
