Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with some olive oil or spray it with cooking spray.
2. Prepare the Potatoes:
- Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
- Once cooked, drain the potatoes and return them to the pot. Add 1/4 cup butter and 1/3 cup milk.
- Mash the potatoes until smooth. Season with salt and pepper to taste. Set aside.
3. Cook the Vegetables:
- While the potatoes are cooking, heat 2 tsp olive oil in a large skillet over medium heat.
- Add the finely chopped onion and carrot. Sauté until they begin to soften, about 5 minutes.
- Add the minced garlic and chopped thyme, cooking until fragrant, about another minute.
4. Cook the Meat:
- Crumble the lamb mince into the skillet with the vegetables. Cook, breaking the meat apart with a spatula, until browned and fully cooked, about 8-10 minutes.
- Stir in the crumbled slice of white bread, tomato puree, and Worcestershire sauce. Cook for another 2-3 minutes.
- Season with salt and pepper to taste. Remove from heat.
5. Assemble the Muffins:
- Spoon the meat mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Top each meat layer with a generous dollop of the mashed potatoes, spreading them out to completely cover the meat mixture.
6. Bake:
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the filling is hot.
7. Serve:
- Allow the Shepherd's Pie Muffins to cool in the pan for a few minutes. This will make them easier to remove.
- Use a knife to gently release the muffins from the sides of the tin. Serve warm.
