Shepherd's pie 'muffins'

Shepherd's Pie 'Muffins' are a delightful twist on the classic Shepherd's Pie, perfect for individual servings and great for parties or meal prep. This dish combines hearty flavors of minced lamb, sautéed vegetables, and creamy mashed potatoes, all baked to perfection in a muffin tin.

Ingredients:

2 tsp olive oil
9g
1 onion
160g
1 carrot
60g
2 garlic cloves
6g
1 tsp fresh thyme
5g
3 potatoes
600g
1/4 cup butter
54g
1/3 cup milk (1% fat)
80g
1 slice white bread
36g
1 lb lamb mince
450g
2 tbsp tomato puree
30g
1 tsp worcestershire sauce
5g

Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with some olive oil or spray it with cooking spray.
2. Prepare the Potatoes:
- Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
- Once cooked, drain the potatoes and return them to the pot. Add 1/4 cup butter and 1/3 cup milk.
- Mash the potatoes until smooth. Season with salt and pepper to taste. Set aside.
3. Cook the Vegetables:
- While the potatoes are cooking, heat 2 tsp olive oil in a large skillet over medium heat.
- Add the finely chopped onion and carrot. Sauté until they begin to soften, about 5 minutes.
- Add the minced garlic and chopped thyme, cooking until fragrant, about another minute.
4. Cook the Meat:
- Crumble the lamb mince into the skillet with the vegetables. Cook, breaking the meat apart with a spatula, until browned and fully cooked, about 8-10 minutes.
- Stir in the crumbled slice of white bread, tomato puree, and Worcestershire sauce. Cook for another 2-3 minutes.
- Season with salt and pepper to taste. Remove from heat.
5. Assemble the Muffins:
- Spoon the meat mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Top each meat layer with a generous dollop of the mashed potatoes, spreading them out to completely cover the meat mixture.
6. Bake:
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the filling is hot.
7. Serve:
- Allow the Shepherd's Pie Muffins to cool in the pan for a few minutes. This will make them easier to remove.
- Use a knife to gently release the muffins from the sides of the tin. Serve warm.

Tips:

- Tip 1: Make sure to finely chop the vegetables so they cook evenly and blend well with the lamb mince.

- Tip 2: Use a potato masher or ricer to ensure smooth and creamy mashed potatoes.

- Tip 3: For added flavor, consider browning the lamb mince before mixing it with the vegetables.

- Tip 4: Line the muffin tin with paper liners or lightly grease it with cooking spray to prevent sticking.

- Tip 5: Let the muffins cool slightly before removing them from the tin to ensure they hold their shape.

Shepherd's Pie 'Muffins' offer a fun and convenient way to enjoy a traditional favorite. Packed with savory lamb and vegetable filling and topped with creamy mashed potatoes, these muffins are sure to be a hit with family and friends. Follow these tips for a perfect, flavorful outcome every time.
