Ingredients:

1 cup rice noodles
230g
2 tbsp olive oil
27g
1 red onion
160g
2 garlic cloves
6g
2 red hot chili peppers
80g
1/2 cup peanuts
72g
8 oz shrimps
230g
2 eggs
100g
1/3 cup chicken gravy
63g
1/3 cup fish sauce
72g
1/4 cup soy sauce
60g
1/3 cup lime juice
72g
2 tbsp sugar
30g
1/2 cup coriander leaves
8g
4 cups lettuce
300g

Instructions:

1. Prepare the Rice Noodles:
- Cook the rice noodles according to the package instructions. Usually, this involves soaking them in hot water for about 5-7 minutes until they are tender. Drain and set aside.
2. Heat the Olive Oil:
- In a large pan or wok, heat the olive oil over medium-high heat.
3. Sauté Vegetables:
- Add the thinly sliced red onion to the pan and sauté until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and sliced red hot chili peppers. Cook for an additional 1-2 minutes, stirring frequently.
4. Add Peanuts and Shrimps:
- Stir in the coarsely chopped peanuts and cook for about 1 minute.
- Add the peeled and deveined shrimps to the pan. Cook until the shrimps turn pink and are cooked through, approximately 3-4 minutes.
5. Cook the Eggs:
- Push the shrimp and vegetables to one side of the pan. Pour the beaten eggs into the other side and scramble them until fully cooked. Once done, mix everything together.
6. Create the Sauce:
- In a small bowl, combine the chicken gravy, fish sauce, soy sauce, lime juice, and sugar. Mix until the sugar is fully dissolved.
7. Combine Noodles and Sauce:
- Add the cooked rice noodles to the pan and pour the sauce over them. Toss everything together to ensure the noodles are well-coated with the sauce and the ingredients are evenly distributed.
8. Finish and Serve:
- Stir in the chopped coriander leaves.
- Serve the shrimp and peanut noodles on a bed of chopped lettuce for an extra crunch and freshness.

Tips:

- For a milder dish, remove the seeds from the chili peppers before slicing.

- Use fresh shrimp for a more succulent and flavorful outcome.

- Soak the rice noodles in hot water for optimal texture.

- Garnish with extra coriander leaves and chopped peanuts for added flavor and presentation.

- Adjust the levels of fish sauce, soy sauce, and lime juice to suit your personal taste preferences.

- For a vegetarian version, substitute shrimp with tofu and use vegetable broth instead of chicken gravy.
