Soup with ground beef, spinach and macaroni

This soup is a classic dish that combines hearty meatballs with nutritious vegetables and pasta in a delicious broth. This version uses ground beef, fresh spinach, and tender macaroni to create a comforting and satisfying meal perfect for any occasion.

Ingredients:

1 lb ground beef(90%/10%)
450g
2 eggs
100g
1/4 cup bread crumbs
27g
2 tbsp grated parmesan cheese
10g
1 tsp dried basil
1.40g
3 tbsp onion
30g
10 cups chicken broth
2400g
2 cups spinach
60g
1 cup macaroni
90g
3/4 cup carrots
100g

Instructions:

1. Prepare the Meatballs:
- In a large mixing bowl, combine the ground beef, eggs, bread crumbs, grated parmesan cheese, dried basil, and finely chopped onion.
- Mix thoroughly until all ingredients are well incorporated.
- Shape the mixture into small meatballs, roughly 1 inch in diameter. Set aside on a plate.
2. Cook the Meatballs:
- In a large pot or Dutch oven, pour in the chicken broth and bring it to a gentle boil over medium-high heat.
- Carefully add the meatballs to the boiling broth. Reduce the heat to medium and let the meatballs simmer in the broth for about 10-12 minutes, or until they are fully cooked.
3. Add Vegetables and Pasta:
- After the meatballs are cooked, add the sliced carrots to the pot. Continue to simmer for another 5 minutes.
- Stir in the dry macaroni and cook according to the package instructions, usually about 8-10 minutes, until the pasta is al dente.

4. Finish with Spinach:
- In the final 2-3 minutes of cooking, add the chopped spinach to the pot. Stir well and let the spinach wilt and become tender.
5. Serve:
- Taste the soup and adjust seasoning if necessary, adding salt and pepper to your preference.
- Ladle the soup into bowls, ensuring each serving gets a good mix of meatballs, vegetables, and pasta.
- Optionally, garnish with additional grated parmesan cheese before serving.
6. Enjoy:
- Serve the Soup hot, accompanied by crusty bread or a simple green salad.

Tips:

- For extra flavor, consider browning the meatballs in a skillet before adding them to the soup.

- Feel free to substitute spinach with other greens like kale or escarole if you prefer.

- Use freshly grated parmesan cheese for a more intense and authentic flavor.

- Make the meatballs ahead of time and freeze them for a quick and easy addition to the soup on busy nights.

With its flavorful meatballs, nutritious spinach, and hearty macaroni, this soup is sure to become a family favorite. Enjoy this comforting and delicious dish as a starter or a main course for any meal.
