Instructions:

1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta and set it aside.
2. Prepare the Vegetables:
- While the pasta is cooking, finely chop the onion and carrot.
- Finely chop the red pepper and mince the garlic cloves.
3. Cook the Meat and Vegetables:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and carrot, and sauté until they are softened, about 5-7 minutes.
- Add the ground beef to the skillet. Cook, breaking it up with a spoon, until it’s browned all over, about 8-10 minutes.
- Add the chopped red pepper and minced garlic to the skillet. Cook for another 2-3 minutes until the pepper is softened and the garlic is fragrant.
4. Make the Sauce:
- Stir in 1 tablespoon of tomato puree, making sure it’s well incorporated.
- Add the chopped tomatoes and 1/2 cup of beef broth to the skillet.
- Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the sauce has thickened to your desired consistency. Stir occasionally.
5. Combine and Serve:
- Add the cooked pasta to the skillet and toss to combine everything well.
- Season with salt and pepper to taste.
- Serve topped with 1/4 cup of grated parmesan cheese.
