Spiced apple and blueberry lattice pie

This Spiced Apple and Blueberry Lattice Pie is a delightful treat that combines the tartness of apples with the sweetness of blueberries, all wrapped in a beautifully woven crust. Perfect for a cozy family dessert or a special occasion, this pie promises a burst of flavors with every bite.

Ingredients:

1.50 cups all-purpose white wheat flour
190g
1/2 cup powdered sugar
80g
1/2 cup butter
110g
1 egg
50g
4 apples
640g
1/3 cup sugar
63g
1 tsp cinnamon
3g
2 garlic cloves
6g
1 cup blueberries
150g
1 tbsp brown sugar
16g

Instructions:

1. Prepare the Crust:
- In a large mixing bowl, combine the flour and powdered sugar.
- Add the cold butter cubes and using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
- Add the egg and mix until the dough comes together. If the dough is too dry, add a tablespoon of cold water, one at a time, until the dough forms a ball.
- Divide the dough into two parts, one slightly larger than the other. Flatten both portions into discs, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
2. Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, sugar, cinnamon, and minced garlic. Mix until the apples are well coated.
- Gently fold in the blueberries.
3. Assemble the Pie:
- Roll out the larger disc of dough on a lightly floured surface to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish, pressing it gently into the bottom and up the sides.
- Pour the apple and blueberry filling into the dough-lined pie dish.
- Roll out the remaining dough disc. Using a sharp knife or a pastry wheel, cut it into 1/2-inch wide strips.
- Create a lattice pattern over the filling by laying half of the strips horizontally across the pie, and then weaving the remaining strips vertically through the horizontal strips.
- Trim any excess dough from the edge of the pie and crimp the edges to seal.
4. Bake the Pie:
- Sprinkle the lattice top with the brown sugar.
- Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
5. Cool and Serve:
- Let the pie cool on a wire rack for at least 2 hours before serving. This allows the filling to set properly.

Tips:

- Make sure the butter is cold when you mix it into the flour for a flaky crust.

- Chill the dough in the fridge for at least 30 minutes before rolling it out to make it easier to handle.

- Peel and core the apples before slicing them for an even texture throughout the pie.

- Use a pizza cutter or a sharp knife to cut even strips for the lattice top.

- Brush the top of the lattice crust with a beaten egg or milk to give it a golden, shiny finish.

- Let the pie cool slightly before serving to ensure that it slices cleanly and the filling sets.

With its perfectly spiced filling and intricately woven lattice crust, the Spiced Apple and Blueberry Lattice Pie is sure to impress both in flavor and presentation. Serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream for an unforgettable experience.
