Kale & Potato Curry is a nutritious and flavorful dish that combines the hearty texture of potatoes with the unique taste of kale. Instructions:

1. Preparation:

2. Cook the Potatoes:
- Place a large pot of water on the stove and bring to a boil.
- Add the diced potatoes and cook for about 10-12 minutes, or until they are tender but not falling apart.
- Drain the potatoes and set them aside.
3. Sauté the Aromatics:
- In a large pan, heat 4 teaspoons of coconut oil over medium heat until melted and hot.
- Add the chopped onion and sauté for about 5 minutes, or until they turn translucent.
- Add the minced garlic and sauté for another 1-2 minutes, stirring constantly to prevent burning.
4. Add Spices:
- Stir in 1 teaspoon of turmeric powder, 1 teaspoon of ground cumin, and 1/2 teaspoon of red pepper.
- Cook the spices for about 1-2 minutes to release their flavors, stirring continuously to avoid sticking.
5. Combine Ingredients:
- Add the cooked potatoes to the pan and stir gently to coat them with the spice mixture.
- Add the chopped kale and 1 teaspoon of salt.
- Cook, stirring occasionally, for about 5-7 minutes, until the kale is wilted and everything is well combined.
6. Finishing Touches:
