Instructions:

1. Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and prick each potato several times with a fork to allow steam to escape while baking.
- Rub the potatoes with 1 tbsp of the olive oil and place them directly on the oven rack.
- Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
2. Cook the Beef Mixture:
- While the potatoes are baking, heat the remaining 1 tbsp of olive oil in a large skillet over medium heat.
- Add the finely chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the ground beef to the skillet. Cook until browned and fully cooked through, breaking up the meat with a wooden spoon as it cooks, about 7-10 minutes.
- Stir in the chili powder, ground cumin, and dried coriander. Cook for another 2-3 minutes to blend the flavors.
- Remove the skillet from the heat and set aside.
3. Prepare the Toppings:
- While the beef is cooking, prepare the toppings:
- Shred the lettuce leaves.
- Grate the cheddar cheese if not pre-shredded.
- Dice the avocado.
- Dice the tomato.
4. Assemble the Dish:
- Once the potatoes are done baking, remove them from the oven and let them cool slightly.
- Cut a slit lengthwise on top of each potato and gently squeeze the sides to open them up.
- Fluff the inside of each potato with a fork.
