Instructions:

1. Preheat Oven:
Preheat your oven to 180°C (350°F).
2. Prepare Capsicums:
Cut the tops off the capsicums and remove the seeds and membranes. Set them aside.
3. Cook the Filling:
In a large frying pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.
4. Brown the Lamb:
Increase the heat to medium-high and add the lamb mince to the pan. Cook until browned, breaking it up with a wooden spoon, about 8-10 minutes.
5. Add Curry Paste:
Stir in the curry paste and cook for 2-3 minutes until fragrant.
6. Add Tomatoes and Lentils:
Pour in the canned tomatoes (with juices) and drained lentils. Mix well and bring to a simmer.
7. Add Vegetables and Herbs:
Reduce the heat to medium-low. Add the peas, coriander leaves, and diced red pepper. Stir to combine, and season with salt and pepper to taste. Simmer for another 5 minutes.
8. Stuff Capsicums:
Spoon the mixture into the prepared capsicums, filling them to the top. Place the stuffed capsicums in a baking dish.
9. Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the capsicums are tender and the tops are slightly browned.
10. Serve:
