- While the pasta is cooking, heat 1 tablespoon of the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.
- Add the spinach to the skillet and cook until wilted. This should take about 2-3 minutes. Remove from heat.
3. Make the Sauce:
- In a blender or food processor, combine the cooked spinach and garlic, low-fat cottage cheese, and the remaining olive oil.
- Blend until smooth, adding a bit of the reserved pasta water if needed to achieve a creamy consistency.
- Transfer the spinach mixture back to the skillet.
4. Combine Pasta and Sauce:
- Add the cooked egg noodles to the skillet with the spinach and cheese mixture.
- Gently toss to combine, ensuring the noodles are well coated with the sauce. If necessary, add a bit more of the reserved pasta water to help mix the sauce evenly.
- Stir in the grated Parmesan cheese, reserving a small amount for garnish if desired.
5. Season and Serve:
- Season the pasta with salt and pepper to taste.
- Serve immediately, garnishing with extra Parmesan cheese if desired.
