1/3 cup pine nuts

- Add the pine nuts to the dry skillet and toast them, stirring frequently, until they are golden brown and aromatic, about 3-5 minutes. Watch carefully to prevent burning.
- Once toasted, transfer the pine nuts to a plate and set aside.
2. Cook the Onions:
- In the same skillet, add the olive oil and heat it over medium heat.
- Add the finely chopped onions to the skillet and cook, stirring occasionally, until they become translucent and start to caramelize, about 10 minutes.
3. Add Currants and Vinegar:
- Stir in the currants and cook for another 2-3 minutes, until they begin to soften.
- Add the vinegar to the skillet, stirring to deglaze the pan and combine the flavors.
4. Wilt the Spinach:
- Gradually add the spinach to the skillet in batches, cooking and stirring until each batch wilts before adding more. This process should take about 5 minutes.
- Continue to cook until all the spinach is wilted and tender, about 1-2 minutes more.
5. Season and Serve:
- Season the mixture with salt and pepper to taste.
- Stir in the toasted pine nuts.
- Serve the spinach with currants and pine nuts immediately as a warm side dish.
