Instructions:

1. Prepare the Salmon:
- Rinse the salmon fillet under cold water and pat it dry with paper towels. Check for any bones and remove them if necessary.
- If the salmon has skin, you can choose to steam it with the skin on and remove it after cooking, or you can remove the skin beforehand.
2. Set Up the Steaming Apparatus:
- Fill a pot or steamer with about an inch of water. Make sure the water level is below the steamer basket.
- Bring the water to a simmer over medium heat.
3. Steam the Salmon:
- Place the salmon fillet in the steamer basket. Season the salmon lightly with salt and pepper.
- Carefully place the steamer basket over the simmering water and cover with a lid.
- Steam the salmon for about 10-15 minutes depending on the thickness of the fillet. The salmon is cooked when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
4. Prepare the Tarragon Vinaigrette:
- In a small bowl, combine 1 tbsp (14g) of olive oil, 2 tbsp (30g) of vinegar, 1 tbsp (16g) of finely chopped fresh tarragon (or 1 tsp dried tarragon), and 2 tsp (10g) of mustard.
- Whisk the ingredients together until well blended. Season with salt and pepper to taste.
5. Serve the Salmon:
- Once the salmon is done steaming, carefully transfer it to a serving platter.
- Drizzle the tarragon vinaigrette over the salmon while it is still warm to allow the flavors to meld.
- Garnish with lemon slices if desired.
6. Enjoy:
- Serve immediately with your favorite side dishes, such as steamed vegetables, rice, or a fresh salad.
