2 lb salmon
1 tbsp olive oil
2 tbsp vinegar
1 tbsp tarragon (estragon)
2 tsp mustard

- In a small bowl, combine 1 tbsp (14g) of olive oil, 2 tbsp (30g) of vinegar, 1 tbsp (16g) of finely chopped fresh tarragon (or 1 tsp dried tarragon), and 2 tsp (10g) of mustard.
- Whisk the ingredients together until well blended. Season with salt and pepper to taste.
5. Serve the Salmon:
- Once the salmon is done steaming, carefully transfer it to a serving platter.
- Drizzle the tarragon vinaigrette over the salmon while it is still warm to allow the flavors to meld.
- Garnish with lemon slices if desired.
