Instructions:

1. Preheat and Prep:
- Preheat your oven to 350°F (175°C).
- Chop and prepare all vegetables as per the ingredients list.
2. Brown the Beef:
- Heat 2 tablespoons of olive oil in a large oven-safe casserole dish or Dutch oven over medium-high heat.
- Add the cubed beef and season with salt and pepper to taste. Brown on all sides for about 5-7 minutes. Remove and set aside.
3. Sauté Vegetables:
- In the same casserole dish, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until soft and fragrant.
- Add the sliced carrots and cook for another 5 minutes.
4. Thicken the Base:

7. Add Final Vegetables:
- Remove the casserole from the oven and stir in the peas and chopped spinach.
