Sweet Chilli Fish with Mash & Beans is a delightful fusion of spicy, savory, and creamy flavors. This recipe combines tender white fish with pungent red hot chili peppers, served alongside creamy mashed potatoes and nutritious green beans. Instructions:

1. Prepare the Potatoes:
- Peel and chop the potatoes into evenly sized chunks.
- Place the potatoes in a large pot and cover with water. Add a pinch of salt.
- Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 10-15 minutes.
2. Prepare the Green Beans:
- While the potatoes are cooking, trim the ends of the green beans.
- Fill a medium saucepan with water and bring to a boil. Add the green beans and cook for about 3-5 minutes until tender-crisp.
- Drain the beans and set them aside.
3. Prepare the Sweet Chili Fish:
- Preheat your oven to 375°F (190°C).
- Finely chop the red hot chili peppers, removing seeds if you prefer less heat.
- In a baking dish, place the white fish fillets. Season with salt and pepper.
- Sprinkle the chopped chili peppers evenly over the fish.
- Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
4. Mash the Potatoes:
- Once the potatoes are tender, drain them and return to the pot.
- Add the heavy whipping cream and milk.
- Mash the potatoes until smooth and creamy, adding more salt and pepper to taste.
5. Serve:
- Divide the mashed potatoes onto plates.
- Place a portion of the sweet chili fish on each plate next to the mashed potatoes.
- Add a portion of green beans to each plate.
- Serve immediately and enjoy!
