1/3 can canned chickpeas

1 tbsp fresh parsley

Instructions:

1. Prepare the Sweet Potatoes:
- Preheat your oven to 200°C (392°F).
- Peel and chop the sweet potatoes into chunks.
- Place them on a baking tray and roast for about 25-30 minutes or until tender and slightly caramelized. Set aside to cool.
2. Prepare the Falafel Mixture:
- Once the sweet potatoes have cooled, place them in a food processor along with the chickpeas, fresh coriander leaves, dried coriander, ground cumin, baking soda, and peeled garlic cloves.
- Pulse until you have a coarse yet combined mixture. The mixture should be slightly chunky, not completely smooth.
- Form the mixture into small balls or patties, about the size of a golf ball.
- In a large non-stick frying pan, heat 2 tsp of olive oil over medium heat.
- Fry the falafels in batches for about 3-4 minutes on each side or until golden brown and crispy. Place on a paper towel to drain any excess oil.
3. Prepare the Tomato Herb Salad:
- While the falafels are cooking, prepare the salad.
- Halve the cherry tomatoes and place them in a large bowl.
- Peel and dice the cucumber, then add to the bowl.
- Finely chop the fresh parsley and add it to the bowl along with the spinach leaves.
