Sweet potato and lentil patties with tzatziki

2 sweet potatos

Instructions:

- Add ground cumin, dried coriander, drained and rinsed lentils, chopped coriander leaves, and bread crumbs to the mashed sweet potatoes. Mix well until all ingredients are fully combined.

3. Form the Patties:
- Take a small handful of the mixture and shape it into a patty. Repeat the process until all the mixture is used up. You should get approximately 6-8 patties depending on the size.
4. Cook the Patties:
- Heat 2 teaspoons of olive oil in a non-stick skillet over medium heat.
- Cook the patties for about 3-4 minutes on each side until golden brown and heated through. Handle them gently as they can be quite delicate.
5. Prepare the Salad:
- In a large bowl, toss together the arugula and halved cherry tomatoes.
