Taco pasta

Taco pasta is a delightful fusion dish that combines the savory flavors of tacos with the comforting textures of pasta. This recipe is perfect for those nights when you want a quick and hearty meal that everyone in the family will love. With ground beef, creamy cheeses, and fresh vegetables, this dish brings together the best of both culinary worlds.

Ingredients:

1 cup onion
160g
1 garlic clove
3g
1 cup coriander leaves
16g
16 oz ground beef (80/20%)
450g
3 oz cream cheese
81g
1/2 cup sour cream
120g
1 tsp salt
6g
1 tsp black pepper
2.10g
8 oz whole-wheat pasta
230g
1 can canned tomatoes
420g

Instructions:

1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the 8 oz whole-wheat pasta and cook according to the package instructions until al dente.
- Drain the pasta and set it aside.
2. Prepare the Beef Mixture:
- In a large skillet, cook the 1 cup finely chopped onion over medium heat until soft and translucent, about 5-7 minutes.
- Add the minced garlic clove and cook for another 30 seconds until fragrant.
- Add the 16 oz ground beef to the skillet. Cook, breaking it up with a wooden spoon, until it's browned and fully cooked through, about 8-10 minutes.
- Add 1 tsp of salt and 1 tsp of black pepper to the beef mixture. Stir to combine.
3. Incorporate the Canned Tomatoes:
- Pour the can of canned tomatoes into the skillet with the ground beef mixture.
- Stir the tomatoes into the mixture and let it simmer for about 5 minutes, allowing the flavors to meld together.
4. Prepare the Creamy Sauce:
- Lower the heat to medium-low.
- Add the 3 oz of softened cream cheese and 1/2 cup sour cream to the beef and tomato mixture.
- Stir continuously until the cream cheese and sour cream are well incorporated and the sauce is smooth and creamy.
5. Combine Everything:
- Add the cooked pasta to the skillet with the beef and creamy tomato mixture. Toss everything together until the pasta is well coated with the sauce.

6. Garnish and Serve:
- Remove the skillet from the heat.
- Add the 1 cup of chopped coriander leaves, stirring them gently into the pasta.
- Serve the taco pasta hot, optionally garnished with extra coriander or a dollop of sour cream.

Tips:

- For extra flavor, consider adding a packet of taco seasoning when cooking the ground beef.

- Garnish with additional coriander leaves, shredded cheese, or a squeeze of lime juice for added freshness.

- If you prefer a spicier dish, add some diced jalapeños or a pinch of cayenne pepper.

- Use whole-wheat pasta for a healthier option, but you can substitute it with any type of pasta you like.

- Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave or on the stove.

With this tasty taco pasta recipe, you've successfully combined the beloved flavors of tacos with the satisfying texture of pasta. This dish is not only delicious but also easy to prepare, making it perfect for a weeknight dinner. Enjoy your meal!
