Instructions:

1. Preheat Oven:
- Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
2. Prepare the Filling:
- In a large mixing bowl, combine the ground beef, chopped coriander leaves, and 1 cup of the salsa sauce. Mix well until all ingredients are evenly incorporated.
3. Prepare the Puff Pastry:
- Lay out the puff pastry sheets on a clean, lightly floured surface. If they're not already rolled out, gently roll each sheet to ensure it's even.
4. Fill the Pastry:
- Divide the beef mixture into four equal portions.
- Take one portion of the beef mixture and place it in a log shape along one edge of a puff pastry sheet. Roll the pastry over the filling to enclose it, ensuring the seam is on the underside.
- Repeat this process with the remaining portions of the beef mixture and puff pastry sheets.
5. Seal and Cut the Rolls:
- Lightly beat the egg in a small bowl. Brush the beaten egg along the seam and ends of each roll to seal them nicely.
- Cut each roll into smaller, bite-sized pieces or desired lengths.
6. Bake the Sausage Rolls:
- Place the sausage rolls onto the lined baking tray, ensuring there is space between each roll.
- Brush the tops of the sausage rolls with the remaining beaten egg to give them a golden, glossy finish.
7. Bake:
- Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown, and the meat is cooked through.
