Chicken fajita wraps are a delicious and versatile meal perfect for lunch or dinner. This recipe combines tender chicken, vibrant vegetables, creamy cheese, and flavorful salsa, all wrapped in soft tortillas. Instructions:

1. Prepare the Ingredients:
- Slice the onion.
- Finely chop the jalapeno pepper. Remove the seeds if you prefer a milder flavor.
- Shred the cheddar cheese if not pre-shredded.
- Shred the lettuce.
2. Cook the Chicken Breasts:
- Heat a large skillet over medium-high heat and add the olive oil.
- Season the chicken breasts with salt and pepper.
- Place the chicken breasts in the skillet and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center (internal temperature should reach 165°F or 74°C).
- Remove the chicken from the skillet and let it rest for a few minutes. Then slice it into thin strips.
3. Cook the Vegetables:
- In the same skillet, add the sliced onions and chopped jalapeno pepper.
- Cook over medium heat until the onions are soft and translucent, about 5-7 minutes.
4. Assemble the Wraps:
- Lay out the tortillas on a flat surface.
- In each tortilla, layer about 1/6th of the cooked chicken strips.
- Add a portion of the cooked onions and jalapenos.
- Spoon 2 tbsp of salsa sauce over the chicken and vegetables in each tortilla.
- Sprinkle approximately 1/4 cup of shredded cheddar cheese over each wrap.
- Add about 1/2 cup of shredded lettuce to each wrap.
- Top it all off with 1 tbsp of sour cream per wrap.
5. Wrap and Serve:
- Fold the sides of each tortilla in and then roll them up from the bottom to the top, securing all the fillings inside.
- Serve immediately while warm.
