- Add 2 tablespoons of finely ground Turkish coffee or espresso coffee (30g) into the pot. Turkish coffee is usually ground to a fine powder consistency.
2. Mix Thoroughly:
- Stir the mixture gently until the sugar and coffee are well combined.
- Make sure the coffee grounds and sugar are fully mixed into the water before heating.
3. Heat Slowly:
- Place the cezve on low to medium heat. It's important to heat it slowly to allow the coffee to develop its rich flavor.
- Keep a close eye on the pot, allowing the coffee to heat up gradually without stirring further.
4. Watch for Froth:
- As the mixture heats, you will notice a frothy foam forming on top. This froth is a key characteristic of well-made Turkish coffee.
- When the froth starts to rise but just before it reaches the rim of the cezve, remove the pot from the heat. This process usually happens quickly, so be attentive.
5. Distribute Froth:
- Using a spoon, gently scoop some of the froth into each of the demitasse cups. This ensures that each cup has a share of the characteristic froth on top.
6. Return to Heat and Simmer:
- After distributing the froth, return the cezve to the heat.
- Allow the coffee to gently come to a boil again, and then remove it from the heat immediately. Repeat this process once more if desired for a more robust flavor.
7. Serve:
- Carefully pour the coffee into the demitasse cups, doing so slowly to ensure even distribution of the remaining froth and liquid.
- Allow the coffee to settle for a minute, letting the grounds sink to the bottom.
