- In a medium saucepan, pour in the 2 cups of milk.
- Add the 1 teaspoon of stevia leaf sweetener to the milk.
- Place the saucepan over medium heat. Stir occasionally and heat the milk until it is hot but not boiling. This will take about 5-7 minutes.
3. Whisk the Eggs:
- While the milk is heating, whisk the 3 eggs in the mixing bowl until they are well combined and slightly frothy.
4. Temper the Eggs:
- Once the milk is hot, remove it from the heat.
- Gradually add about 1/2 cup of the hot milk into the whisked eggs, whisking constantly to avoid cooking the eggs.
- Slowly pour the tempered egg mixture back into the remaining hot milk in the saucepan, whisking continuously.
5. Cook the Mixture:
- Place the saucepan back over medium-low heat.
- Cook the mixture, stirring constantly, until it thickens to a custard-like consistency. This should take around 5-10 minutes. Do not let the mixture boil.
6. Add Flavorings:
- Remove the saucepan from the heat once the mixture has thickened.
- Stir in the 1 tablespoon of vanilla extract and 1/2 teaspoon of ground nutmeg until well combined.
7. Cool and Chill:
- Pour the dessert cream into a serving dish or individual serving cups.
- Let it cool to room temperature, then cover the dish with plastic wrap.
