Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Vegetables:
- Finely chop the onion.
- Slice the mushrooms.
- Mince the garlic cloves.
- Grate the zucchini and use a kitchen towel or paper towel to squeeze out any excess moisture.
3. Sauté Onions and Mushrooms:
- Heat 2 tbsp of olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Add the sliced mushrooms and minced garlic. Continue to sauté until the mushrooms are tender and any liquid has evaporated, about 5-6 minutes more.
- Season with a pinch of salt and pepper to taste. Remove from heat and let it cool slightly.
4. Prepare the Egg Mixture:
- In a large bowl, whisk together the eggs until they are well combined.
- Gradually add the flour to the eggs, whisking constantly to avoid lumps.
- Fold in the shredded cheddar cheese, chopped parsley, and grated zucchini. Mix well to combine.
