Instructions:

1. Preheat Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare Ingredients:
- Cut the potatoes into chunks and slice the red onions.
- Mince the garlic cloves.
- Halve the cherry tomatoes.
3. Mix Marinade:
- In a small bowl, combine the balsamic vinegar, olive oil, brown sugar, and minced garlic. Stir well until the brown sugar dissolves.
4. Marinate Chicken:
- Place the chicken thighs in a large bowl or a zip-lock bag. Pour half of the balsamic mixture over the chicken, making sure they are well coated. Let marinate for at least 15 minutes.
5. Prepare Baking Dish:
- In a large baking dish, spread the potato chunks, sliced red onions, and fresh thyme evenly.
6. Add Chicken:
- Remove chicken from marinade and place the thighs on top of the vegetables in the baking dish.
- Drizzle the remaining balsamic mixture over the entire dish.
7. Bake:
- Bake in the preheated oven for about 35 minutes.
8. Add Cherry Tomatoes:
- After 35 minutes, remove the baking dish and add the halved cherry tomatoes.
- Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
9. Serve:
- Remove from the oven and let it rest for a few minutes.
