- Reduce the heat to low and keep the beef warm while you prepare the other ingredients.
2. Heat the Black Beans:
- In a medium saucepan, add the drained and rinsed black beans.
- Warm over medium heat for about 5 minutes, stirring occasionally.
- Add a pinch of salt or other seasonings if desired.
3. Warm the Tortillas:
- Heat a large, dry skillet over medium heat.
- Warm each tortilla in the skillet for about 30 seconds on each side until they are soft and pliable.
- Alternatively, you can wrap the tortillas in a damp paper towel and microwave them in 30-second intervals until warm.
4. Assemble the Burritos:
- Lay a warm tortilla flat on a clean surface.
- Spread a generous spoonful of the cooked ground beef in the center of the tortilla.
- Add a spoonful of black beans on top of the beef.
- Sprinkle a handful of shredded cheddar cheese over the beans and beef.
- Add a dollop of sour cream.
5. Fold the Burritos:
- Fold the sides of the tortilla in towards the center.
- Tightly roll the tortilla from the bottom up to create a burrito.
- Repeat the assembly process with the remaining tortillas and filling ingredients.
