Instructions:
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and line a square baking pan with parchment paper for easy removal.
2. Mix Dry Ingredients:
- In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
3. Beat Eggs and Sugar:
- In a large mixing bowl, beat the eggs and sugar together using an electric mixer on high speed until the mixture is pale, thick, and tripled in volume (about 5 minutes).
4. Add Vanilla:
- Beat in the vanilla extract until well combined.
5. Combine Flour Mixture:
- Gently fold the dry ingredients into the egg mixture in batches, using a spatula. Be careful not to deflate the batter.
6. Prepare the Batter:
- In a small saucepan, melt the butter with the 1/2 cup of water and let it cool slightly.
- Gently fold the melted butter mixture into the batter until fully incorporated.
7. Add Blueberries:
- Carefully fold the blueberries into the batter.
8. Bake:
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.
9. Cool:
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
10. Cut and Coat:
- Once the cake is completely cooled, cut it into squares of your desired size.
- In a small bowl, mix together the lemon juice with a little water to make a quick syrup.
11. Dip and Roll:
- Lightly dip each cake square into the lemon syrup to moisten, then roll each square in the dried coconut meat until fully coated.
12. Serve:
- These lamingtons are best served fresh but can be stored in an airtight container at room temperature for up to 2 days.
Tips:
- Measure Ingredients Accurately: Ensure you measure the flour, sugar, and other ingredients accurately for the best results. Use a kitchen scale if possible.
- Room Temperature Ingredients: Make sure your eggs and butter are at room temperature. This helps to achieve a smoother, more consistent batter.
- Gentle Folding: When incorporating the flour, use a gentle folding motion to avoid deflating the eggs, which helps maintain the cake's light and airy texture.
- Prep in Advance: Prepare your ingredients and equipment beforehand to make the cooking process smoother and more efficient.
- Cooling the Cake: Allow the cake to cool completely before cutting and coating. This will help prevent it from crumbling.
- Fresh Blueberries: Use fresh blueberries for the best flavor. If using frozen blueberries, thaw and drain them well to avoid excessive moisture.
