Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a muffin tray or line it with paper muffin liners.
2. Cook the Bolognese Sauce:
- Heat 1/4 cup of olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Stir in the fresh thyme and cook for another minute to release its fragrance.
- Add the ground beef to the skillet, breaking it apart with a spoon or spatula. Cook until browned, about 5-7 minutes.
- Mix in the tomato puree, cherry tomatoes, and tomato sauce. Allow to simmer for another 5 minutes, then remove from heat and set aside.
3. Prepare the Muffin Batter:
- In a large bowl, combine the self-raising flour and grated parmesan cheese.
- In a separate bowl, whisk together the milk, remaining 1/4 cup of olive oil, and eggs until well blended.
- Gradually fold the wet ingredients into the dry ingredients until just combined. Do not overmix; the batter should be slightly lumpy.
4. Combine Bolognese and Batter:
- Gently fold the cooled Bolognese sauce into the muffin batter until evenly distributed.
5. Fill the Muffin Tray:
- Spoon the batter into the prepared muffin tray, filling each cup about 3/4 full.
6. Bake:
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
7. Cool and Serve:
