1/2 cup capers
90g
1 red onion
160g
2 garlic cloves
6g
8 oz salmon
230g

Instructions:

1. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the pasta and set aside.
2. Prepare the Ingredients:
- While the pasta cooks, finely chop the red onion and mince the garlic.
- Thinly slice the smoked salmon and set it aside.
3. Fry the Capers:
- Heat a large skillet over medium-high heat.
- Pat the capers dry with a paper towel.
- Add a drizzle of olive oil to the skillet and once hot, add the capers.
- Fry the capers until they are crispy, about 3-4 minutes.
- Remove the capers with a slotted spoon and drain on paper towels. Set aside.
4. Sauté the Aromatics:
- In the same skillet, reduce the heat to medium.
- Add a bit more olive oil if needed, then add the chopped red onion.
- Sauté the onion until it becomes soft and translucent, about 5 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
5. Combine and Finish:
- Add the cooked pasta to the skillet with the sautéed onion and garlic.
- Pour in some of the reserved pasta water (start with 1/2 cup) to help create a light sauce, stirring well to combine.
- Fold in the thinly sliced smoked salmon and half of the fried capers.
6. Serve:
- Divide the pasta among serving plates.
- Top each plate with the remaining fried capers.
- Optionally, garnish with freshly ground black pepper and a sprinkle of fresh herbs such as parsley or dill.

Tips:

- Ensure you use high-quality smoked salmon for the best flavor.

- Rinse the capers to remove excess salt before frying them for a perfect crisp.
