Breakfast pies are a delicious and comforting way to start your morning. Combining the savory flavors of bacon, mushrooms, and onions with the creamy texture of sour cream and the flaky goodness of puff pastry, this recipe is sure to become a family favorite.

Ingredients:

Instructions:

1. Cook the filling:
- Heat 1 tbsp of olive oil in a large skillet over medium heat.

- Add the chopped bacon to the skillet and cook until crispy, about 5-7 minutes.
- Add the sliced mushrooms and fresh thyme to the skillet, cooking until the mushrooms are tender and any liquid has evaporated, about 5 minutes more.
- Remove the skillet from heat and set aside to cool slightly.
2. Prepare the pastry:
- Roll out the puff pastry sheets on a lightly floured surface if needed.
- Cut each sheet into equal-sized squares or circles, depending on your preference, ensuring they are large enough to hold some filling and be folded over or topped.
- Place half of the pastry pieces on a parchment-lined baking sheet.
3. Fill the pies:
- In a small bowl, whisk together the 2 eggs and 1 cup of light sour cream until well combined.
- Combine the cooled filling mixture with the egg and sour cream mixture.
- Spoon a generous amount of the filling onto the center of each pastry piece on the baking sheet.
4. Seal the pies:
- Place the remaining pastry pieces over the filling-covered pieces or fold each piece over the filling to form a closed pie.
- Press the edges with a fork to seal them securely.
- Optionally, you can cut small slits on the top to allow steam to escape.
5. Bake:
- Brush the tops of the pies with a little beaten egg or milk if desired for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky.
