Breakfast pies

Breakfast pies are a delicious and comforting way to start your morning. Combining the savory flavors of bacon, mushrooms, and onions with the creamy texture of sour cream and the flaky goodness of puff pastry, this recipe is sure to become a family favorite.

Ingredients:

1 tbsp olive oil
14g
1 onion
160g
3 bacon strips
72g
1 cup mushrooms
230g
1 tsp fresh thyme
5g
3 sheets puff pastry
750g
2 eggs
100g
1 cup light sour cream
230g

Instructions:

2. Cook the filling:
- Heat 1 tbsp of olive oil in a large skillet over medium heat.
- Add the chopped onion to the skillet and sauté until softened and translucent, about 5 minutes.
- Add the chopped bacon to the skillet and cook until crispy, about 5-7 minutes.
- Add the sliced mushrooms and fresh thyme to the skillet, cooking until the mushrooms are tender and any liquid has evaporated, about 5 minutes more.
- Remove the skillet from heat and set aside to cool slightly.
3. Prepare the pastry:
- Roll out the puff pastry sheets on a lightly floured surface if needed.
- Cut each sheet into equal-sized squares or circles, depending on your preference, ensuring they are large enough to hold some filling and be folded over or topped.
- Place half of the pastry pieces on a parchment-lined baking sheet.
4. Fill the pies:
- In a small bowl, whisk together the 2 eggs and 1 cup of light sour cream until well combined.
- Combine the cooled filling mixture with the egg and sour cream mixture.
- Spoon a generous amount of the filling onto the center of each pastry piece on the baking sheet.
5. Seal the pies:
- Place the remaining pastry pieces over the filling-covered pieces or fold each piece over the filling to form a closed pie.
- Press the edges with a fork to seal them securely.
- Optionally, you can cut small slits on the top to allow steam to escape.
6. Bake:
- Brush the tops of the pies with a little beaten egg or milk if desired for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky.
7. Serve:
- Allow the breakfast pies to cool slightly on a wire rack before serving.

Tips:

- Preparing Ingredients: Make sure to finely chop the onion and slice the mushrooms evenly. This ensures that they cook uniformly and blend well with the other ingredients.

- Pre-Cooking: Cook the bacon strips until they are crispy. This will add a wonderful flavor and texture to your breakfast pies.

- Puff Pastry Handling: Keep your puff pastry cold until you are ready to use it. This will help it puff up nicely and create a flaky texture.

- Egg Wash: Brush the top of the pies with a beaten egg for a beautiful golden-brown finish.

- Flavor Enhancement: Feel free to add your favorite herbs or spices to the mixture for extra flavor. Thyme works well, but rosemary or parsley could be great alternatives.

- Cheese Option: For a richer taste, consider adding a handful of grated cheese to the filling mixture before baking.

With just a few simple ingredients and steps, you can create a hearty and satisfying breakfast treat. These breakfast pies are not just easy to make but also customizable to your taste. Enjoy them fresh out of the oven, and they are sure to brighten up your mornings.
