This nutritious and delicious Kale, Sweet Potato, and Onion Frittata is a perfect meal for breakfast, lunch, or dinner. Combining the rich flavors of sweet potatoes, fresh kale, and savory onions with a blend of whole eggs and egg whites, this dish is both healthy and satisfying.

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C).
2. Prepare Egg Mixture:
In a large bowl, whisk together the 3 egg yolks and 8 egg whites until well combined. Season with a dash of salt and a dash of black pepper. Set aside.
3. Cook Sweet Potato:
Heat 1 tsp of olive oil in a large, oven-safe skillet over medium heat. Add the diced sweet potato and cook, stirring occasionally, until the pieces are tender and lightly browned, about 8-10 minutes.
4. Sauté Onion:
Add another 1 tsp of olive oil to the skillet. Stir in the chopped onion and cook until the onions are translucent, about 4-5 minutes.
5. Add Kale:
Add the chopped kale to the skillet and cook until it is wilted, about 3-4 minutes.
6. Combine Ingredients:
Distribute the sweet potato, onion, and kale mixture evenly in the skillet. Reduce the heat to low.
7. Pour Egg Mixture:
Pour the egg mixture evenly over the vegetables in the skillet. Let it cook undisturbed for a few minutes until the edges start to set, about 2-3 minutes.
8. Bake the Frittata:
Transfer the skillet to the preheated oven. Bake until the frittata is set in the center and lightly golden on top, about 12-15 minutes.
9. Cool and Serve:
Remove the skillet from the oven and let the frittata cool for a few minutes. Slice it into wedges and serve warm.
