Broccoli Chicken Zucchini Boats with Cheddar Cheese is a delicious and healthy dish that's perfect for any meal. This recipe is filled with nutritious ingredients like chicken, broccoli, and zucchini, and topped with creamy cheddar cheese for an irresistible flavor.

Ingredients:

1 tbsp olive oil
14g
6 oz chicken breasts
170g
1 zucchini
320g
2 tbsp butter
27g
1 dash black pepper
1/10g
1 dash salt
0.40g
1 cup broccoli
70g
2 tbsp sour cream
30g
3 oz cheddar cheese
81g
1 cup onion
100g

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Zucchini:
- Cut the zucchini in half lengthwise.
- Scoop out the center of each half to create "boats," leaving about a ¼ inch thick shell. Reserve the scooped-out zucchini flesh for later use.
3. Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the diced chicken breasts and cook until browned and fully cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
4. Sauté the Vegetables:
- In the same skillet, add the 2 tablespoons of butter.
- Once the butter is melted, add the chopped onion, broccoli, and the reserved scooped-out zucchini flesh (chopped).
- Season with a dash of black pepper and a dash of salt.
- Sauté the vegetables until they are tender, about 5-6 minutes.
5. Combine Chicken and Vegetables:
- Return the cooked chicken to the skillet.
- Stir in the 2 tablespoons of sour cream.
- Cook for another 2 minutes until everything is well combined and heated through.
6. Assemble the Zucchini Boats:
- Place the zucchini halves in a baking dish.
- Spoon the chicken and vegetable mixture evenly into each zucchini boat.
7. Add the Cheddar Cheese:
- Top each zucchini boat with shredded cheddar cheese.
8. Bake:
- Place the baking dish in the preheated oven.
- Bake for 15-20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
9. Serve:
- Remove from the oven and let cool slightly before serving.
- Enjoy your delicious Broccoli Chicken Zucchini Boats with Cheddar Cheese!

Tips:

- Preheat the oven to 375°F (190°C) for even cooking.

- Scoop out the zucchini flesh carefully to avoid breaking the zucchini shells.

- Cook the chicken until it’s fully done before combining with other ingredients.

- Steam the broccoli slightly if you prefer a softer texture.

- Mix the sour cream thoroughly with the cooked ingredients for a creamier filling.

- Shred the cheddar cheese finely for easier melting.

- Season to taste, and feel free to add herbs like basil or oregano for extra flavor.

With its delightful combination of creamy, cheesy, and savory flavors, Broccoli Chicken Zucchini Boats with Cheddar Cheese is sure to become a favorite. Enjoy this nutritious dish that’s perfect for any occasion, from casual family dinners to special gatherings.
