Instructions:

1. Prepare the Cauliflower:
- Remove the leaves and core from the cauliflower head. Cut the cauliflower into small florets.

- Drain the cauliflower well and allow it to cool slightly. Using a clean kitchen towel or paper towels, pat the cauliflower to remove excess moisture.
2. Mash the Cauliflower:
- Transfer the cooked cauliflower to a large mixing bowl. Use a potato masher or fork to mash the cauliflower until it resembles coarse crumbs or a chunky mash.
3. Mix the Ingredients:
- Add the grated cheddar cheese, grated parmesan cheese, and bread crumbs to the mashed cauliflower. Mix well to combine.
- In a small bowl, beat the egg and then add it to the cauliflower mixture.
- Add the red pepper, salt, black pepper, and onion powder to the mixture. Stir everything until well combined.
4. Form the Fritters:
- Using your hands, shape the mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.
5. Cook the Fritters:
