Ingredients:

Instructions:

1. Prepare the Chicken:
- Lightly spray a large skillet with cooking spray oil and heat over medium-high heat.
- Season the chicken breasts with salt and pepper, and then add them to the skillet. Cook until the chicken is browned and cooked through, approximately 6-7 minutes per side.
- Remove the chicken from the skillet, let it rest for a few minutes, then cut it into bite-sized pieces. Set aside.
2. Heat the Chicken Gravy:
- In a large saucepan, warm the chicken gravy over low heat. Keep it at a gentle simmer throughout the cooking process.
3. Start the Risotto:
- In the same skillet used for the chicken, heat 2 tsp of olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute, until fragrant.
4. Cook the Rice:

- Gently fold in the cooked chicken pieces and cook for another 2-3 minutes until heated through.
7. Finish the Risotto:
- Stir in the lime zest and lime juice. Season with additional salt and pepper to taste.
