Instructions:

1. Prepare Vegetables:
- Chop the onion and garlic cloves finely.
- Peel and dice the potatoes.
- Chop the zucchini and the fresh parsley.
2. Sauté Aromatics:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until the onion becomes translucent and the garlic is fragrant, approximately 5 minutes.
3. Add Herbs and Broth:
- Stir in the fresh thyme and cook for another minute.
- Pour in the chicken gravy and bring to a boil.
4. Add Vegetables:
- Add the diced potatoes and chopped zucchini to the pot.
- Lower the heat to medium-low and let the vegetables simmer until they are tender, about 20-25 minutes.
5. Blend the Soup:
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
