Instructions:

1. Prepare the Chicken:
- Lay the chicken breasts on a cutting board. If they are thick, you may want to butterfly them or pound them to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts generously with salt, pepper, and dried oregano, making sure the seasoning is evenly distributed.
2. Wrap with Prosciutto:
- Lay each chicken breast flat and place a slice of prosciutto on top. Press gently to adhere the prosciutto to the chicken.
3. Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the chicken breasts, prosciutto-side down. Cook for 4-5 minutes until the prosciutto is crisp and the chicken is golden brown.
- Flip the chicken breasts and cook the other side for another 4-5 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
4. Prepare the Garlic:
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute, or until fragrant.
5. Cook the Vegetables:
- Add the green beans and peas to the skillet. Sauté the vegetables for 4-5 minutes, or until they are tender but still vibrant in color. Season with a pinch of salt and pepper.
6. Combine & Serve:
- Once the vegetables are cooked, remove the skillet from the heat. Crumble the feta cheese over the vegetable mixture and stir gently to combine.
- Serve the sautéed vegetables alongside the chicken saltimbocca. Alternatively, you can slice the chicken and place it on top of the vegetable mix.
