Chicken and oregano saltimbocca

Chicken and oregano saltimbocca is a delightful and flavorful dish that combines the savory goodness of chicken with the aromatic notes of oregano and prosciutto. This Italian-inspired recipe is not only delicious but also surprisingly simple to prepare. Perfect for a weeknight dinner or a special occasion, this dish is sure to impress.

Ingredients:

1.50 lb chicken breasts
680g
2 tbsp dried oregano
30g
2 garlic cloves
6g
3 slices prosciutto
50g
salt & pepper to taste
2 tbsp olive oil
27g
1 cup green beans
230g
1 cup peas
120g
1 cup feta cheese
230g

Instructions:

1. Prepare the Chicken:
- Lay the chicken breasts on a cutting board. If they are thick, you may want to butterfly them or pound them to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts generously with salt, pepper, and dried oregano, making sure the seasoning is evenly distributed.
2. Wrap with Prosciutto:
- Lay each chicken breast flat and place a slice of prosciutto on top. Press gently to adhere the prosciutto to the chicken.
3. Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the chicken breasts, prosciutto-side down. Cook for 4-5 minutes until the prosciutto is crisp and the chicken is golden brown.
- Flip the chicken breasts and cook the other side for another 4-5 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
4. Prepare the Garlic:
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute, or until fragrant.
5. Cook the Vegetables:
- Add the green beans and peas to the skillet. Sauté the vegetables for 4-5 minutes, or until they are tender but still vibrant in color. Season with a pinch of salt and pepper.
6. Combine & Serve:
- Once the vegetables are cooked, remove the skillet from the heat. Crumble the feta cheese over the vegetable mixture and stir gently to combine.
- Serve the sautéed vegetables alongside the chicken saltimbocca. Alternatively, you can slice the chicken and place it on top of the vegetable mix.
7. Garnish and Enjoy:
- Optionally, you may garnish with additional fresh oregano or a squeeze of lemon juice for added flavor.
- Serve immediately and enjoy your delicious Chicken and Oregano Saltimbocca!

Tips:

- Pound the chicken breasts lightly to an even thickness to ensure even cooking.

- Use fresh oregano for a more vibrant flavor if available, though dried will still work well.

- When wrapping the chicken in prosciutto, ensure it is tightly secured to prevent it from unraveling while cooking.

- To avoid overcooking, use a meat thermometer. The chicken should reach an internal temperature of 165°F (74°C).

- You can blanch the green beans and peas before serving if you prefer them to be tender-crisp.

Chicken and oregano saltimbocca is an exquisite meal that brings together the earthy flavors of oregano, the salty richness of prosciutto, and the creamy tanginess of feta cheese, all complemented by fresh green beans and peas. This easy-to-follow recipe offers a satisfying and nutritious dish that will please family and friends alike. Enjoy your culinary creation!
