Instructions:

1. Prepare the Herbed Butter:
- In a small bowl, combine the softened butter with finely chopped garlic and chives. Mix well to ensure the garlic and chives are evenly distributed throughout the butter.
- Place the herbed butter onto a piece of plastic wrap, shape it into a small log, and refrigerate until firm.
2. Flatten the Chicken Breasts:
- Place each chicken breast between two sheets of plastic wrap or parchment paper.
- Using a meat mallet or rolling pin, gently pound the chicken breasts to an even thickness, about 1/4 inch (0.5 cm). Be careful not to tear the meat.
3. Stuff the Chicken:
- Once flattened, remove the herbed butter from the refrigerator and cut it into four equal portions.
- Place one piece of herbed butter in the center of each chicken breast.
- Carefully roll up each chicken breast, tucking in the sides to completely enclose the butter. Secure with toothpicks if necessary.

- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
6. Prepare the Potatoes:
- Peel and cut the potatoes into evenly sized chunks.
- Place them in a large pot and cover with cold water.
- Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
7. Mash the Potatoes:
- Drain the potatoes and return them to the pot.
- Add 1/2 cup milk and mash until smooth and creamy. Keep warm.
8. Plate the Dish:
- Remove the Chicken Kyiv from the oven and let it rest for a few minutes before slicing.
- Serve each chicken breast alongside a generous portion of mashed potatoes.
