- Roast in the oven for about 25-30 minutes or until golden brown and tender, turning halfway through the cooking time.

- Butterfly each chicken breast by slicing it in half horizontally, but do not cut all the way through. Open the chicken breasts like a book.
- Lay a slice and a half of prosciutto over each chicken breast, followed by evenly distributing the chopped sage.
- Fold the chicken breasts back over so the prosciutto and sage are inside, and secure with toothpicks if needed.
3. Cook the Chicken:
- Heat the butter and olive oil in a large skillet over medium-high heat.
- Once the butter is melted and the oil is hot, add the chicken breasts to the skillet.
- Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

- Remove the toothpicks from the chicken breasts, if used, and slice them into medallions.
