Ingredients:

2 tbsp butter

1/3 cup all-purpose white wheat flour

Instructions:

1. Prepare the Pastry:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium saucepan, melt the 2 tbsp of butter over medium heat until it just starts to bubble.
- Add the 1/3 cup of all-purpose flour to the melted butter, and stir continuously until the mixture forms a smooth paste, then cook for another 1-2 minutes while stirring.
- Remove from heat and let it cool down slightly.
- In a separate bowl, cream together 3 of the egg yolks (50g) with 1/4 cup sugar (50g) until thick and pale.
- Slowly pour this egg mixture into the butter and flour mixture, stirring continuously until it's fully combined and forms a dough-like consistency.
2. Bake the Profiteroles:
- Transfer the dough into a piping bag fitted with a large round tip.
- Pipe small mounds of dough onto the lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 20-25 minutes until golden brown and puffed up.
- Remove from the oven and pierce each profiterole with a toothpick or skewer to release the steam, allowing them to cool completely on a wire rack.
3. Prepare the Filling:
- In a medium saucepan, heat the 1.5 cups of milk over medium heat until it begins to simmer.
- In a separate bowl, whisk together the remaining 3 egg yolks (50g) and 1/4 cup sugar (50g) until light and creamy.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Pour the mixture back into the saucepan and cook over low heat, stirring continuously, until it thickens and coats the back of a spoon, forming a custard.
- Remove from heat and stir in the 1 tsp of vanilla extract.
4. Prepare the Chocolate Sauce:
- Melt the 1/2 cup of dark chocolate in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth.
- Once melted, remove from heat and set aside.
5. Assemble the Profiteroles:
- Use a sharp knife to slice each profiterole in half horizontally.
- Spoon or pipe the cooled custard into the bottom half of each profiterole, then replace the top half.
- Drizzle the melted dark chocolate over the filled profiteroles.
6. Serve:
- Arrange the profiteroles on a serving plate.
