Couscous with toasted almonds

Couscous with toasted almonds is a delightful dish that combines the fluffy texture of couscous with the crunchy, nutty flavor of toasted almonds. This recipe is not only easy to prepare but also packed with aromatic spices that elevate its taste. It serves as a perfect side dish or a light main meal.

Instructions:

1. Prepare the Couscous:
- In a medium pot, bring 1 1/4 cups of water or broth to a boil. If you prefer a more flavorful dish, use vegetable or chicken broth.
2. Toast the Almonds:
- While the water/broth is heating, toast the almonds. Place a small dry frying pan over medium heat.
- Add the almonds and toast them, stirring frequently, until they are golden brown and fragrant, about 3-5 minutes.
- Remove from the pan and set aside.
3. Cook the Aromatics:
- In the same pot that you will use for the couscous, heat 1 tbsp olive oil over medium heat.
- Add the finely chopped red onion and sauté until it becomes translucent and starts to soften, about 3 minutes.
- Stir in the ground ginger, ground cinnamon, and dried coriander. Cook for another 1-2 minutes until fragrant.
4. Cook the Couscous:
- Once the aromatics are ready, add the couscous to the pot and stir to coat the grains with the oil and spices.
- Pour the boiling water or broth over the couscous. Give it a quick stir, then cover the pot with a lid.
- Remove the pot from heat and let it stand for about 5 minutes, or until the liquid is completely absorbed.
5. Fluff and Combine:
- After the couscous has absorbed all the liquid, remove the lid and fluff the grains with a fork.
- Gently fold in the toasted almonds.
- Season with salt and pepper to taste.
6. Serve:
- Transfer the couscous to a serving dish.
- Serve warm as a side dish or light main course.

Tips:

- Use vegetable broth instead of water to cook the couscous for added flavor.

- Toast the almonds in a dry pan over medium heat until they are lightly browned and fragrant, but be careful not to burn them.

- For added freshness, garnish the dish with chopped parsley or coriander leaves before serving.

- Consider adding raisins or dried apricots for a touch of sweetness.

Couscous with toasted almonds is a versatile and flavorful dish that can complement a variety of main courses. The combination of aromatic spices and the crunch of almonds makes it a standout. Enjoy this quick and easy meal that brings a world of flavor to your table.
