2. Toast the Almonds:
- While the water/broth is heating, toast the almonds. Place a small dry frying pan over medium heat.
- Add the almonds and toast them, stirring frequently, until they are golden brown and fragrant, about 3-5 minutes.
- Remove from the pan and set aside.
3. Cook the Aromatics:
- In the same pot that you will use for the couscous, heat 1 tbsp olive oil over medium heat.
- Add the finely chopped red onion and sauté until it becomes translucent and starts to soften, about 3 minutes.
- Stir in the ground ginger, ground cinnamon, and dried coriander. Cook for another 1-2 minutes until fragrant.
4. Cook the Couscous:
- Once the aromatics are ready, add the couscous to the pot and stir to coat the grains with the oil and spices.
- Pour the boiling water or broth over the couscous. Give it a quick stir, then cover the pot with a lid.
- Remove the pot from heat and let it stand for about 5 minutes, or until the liquid is completely absorbed.
5. Fluff and Combine:
- After the couscous has absorbed all the liquid, remove the lid and fluff the grains with a fork.
- Gently fold in the toasted almonds.
- Season with salt and pepper to taste.
